It has been sooooooo long since I last shared a recipe with all of you! If you watch my Instastories, you should know by now that I always share about cooking for my family. :D Honestly I am not the best cook, everyday is a learning experience, especially when it comes to cooking new dishes. But, resepi sambal sotong ni is my go-to, credit to my mom for the base recipe *thanks Ma* but as usual, I will always tweak any recipes according to my taste.
Resepi sambal sotong ni is so easy, sumpah senang! Resepi ni sama macam resepi yang Mama bagi but I added cili padi untuk bagi 'kick' pedas. And I'm not sure if Mama letak halia, but I always put in ginger in my sambal yang berkuah. I suka sambal sotong yang berkuah (lebih from the usual), but if you don't like it, omit the water because air sotong akan keluar when you are cooking. My tips in cooking squid is to masak no more than 10 minutes to ensure sotong lembut and tak liat. Kalau makan tu macam makan kunyah chewing gum, maksudnya sotong korang tu dah terlebih masak. This recipe sesuai untuk dua orang makan, especially yang baru kahwin tu kan, kadang-kadang pening nak masak sebab tak sure sukatan macamane. Haaaa, I make it easy for you lovebirds! Tapi kalau nak masak untuk 2 pax lebih, double aja la recipe, ok? Jom masak! :D
BAHAN-BAHAN (for 2 pax)
Bahan A - Blend/kisar halus semua
5 ulas bawang merah kecil
3 ulas bawang putih
10 batang cili kering (potong and rendam dengan air panas for 5 minutes,then masukkan dlm blender)
1/2 inci halia
1/2 inci belacan - yang dah di bakar (For aromatic sambal! You can skip this if you don't eat belacan but adding belacan makes all the difference!)
1 biji cili padi
Bahan-bahan lain :
4 sotong - medium size (hiris - jangan nipis sangat)
Asam keping (yang kecil comel je)
Bawang besar (hiris bulat-bulat)
1/2 cawan air (optional)
2 1/2 teaspoon (I guna sudu KFC yang plastic for coleslaw and mashed potatoes tu)
3/4 teaspoon garam (I guna sudu KFC yang plastic for coleslaw and mashed potatoes tu)
CARA-CARA :
1. Tumis BAHAN A sampai pecah minyak (slightly), then masukkan gula.
2. Agak-agak cili dah masak and dah tukar colour to deep red, masukkan sotong. Masa ni bole masukkan air sikit kalau nak, kalau tak mau, tak yah letak. Kacau kejap dalam seminit dua.
3. Lepas tu masukkan bawang besar, asam keping and garam. Adjust rasa masam, manis and masin.
4. After air dah reduce and sambal macam dah pekat sikit, boleh la tutup api. I would say masak sotong tu dalam 10 minutes.
SIAP!! :D
Makan sambal sotong dengan ikan goreng, sayur tumis and letak kicap kat nasi panas, perghhhhhhhh SEDAP WEHHHH! :D *hehehe* I hope you guys enjoy this recipe, senang je kan? Dah kahwin ade anak ni, semangat nak masak tu lain macam tau. :P
